Here's how to do it using icedove (Debian's de-branded thunderbird):

Bring up the preferences panel (Edit > Preferences).

On the Display panel's "Formatting" tab under "Fonts" click the

"Advanced" button. Plaintext editing fonts are controlled by the

"Monospace" dropdown boxes.
