Yet again more progress. Knowing that I couldn't run Gnome-session twice on the machine, but that I could get it to run in VNC if the server machine was console-only, I searched Google for "vncserver RedHat 8.0" and found this link to a discussion group on realvnc.com:

Short form: change the ~/.vnc/xstartup to:
unset SESSION_MANAGER gnome-session &
And I have Gnome running locally and remotely at the same time.
